SKILLET ZITI WITH BROCCOLI, CHICKEN, AND SUN DRIED TOMATOES
2 Tbsp. EVOO
1 lb. chicken, cut into bite sized pieces*
6 cloves garlic, minced (I will probably use 3)
1/4 tsp. red pepper flakes
6 scallions, chopped
8 oz. whole wheat ziti or penne
3 1/2 cups non fat milk, divided
1 1/2 cups low fat chicken broth
1 lb. broccoli, cut into small florets
1/2 c. sun dried tomatoes, oil drained
1/2 c. parmesan cheese
3/4 tsp. salt
1. Heat oil in large skillet over medium high heat until shimmering. Add chicken and cook without stirring until browned, 2-3 minutes. Stir and continue to cook for 1 minute longer. Transfer chicken to bowl and set aside. (it will not be fully cooked)
2. Add garlic, pepper flakes, and scallions to the skillet and cook, stiffing until fragrant about 30 seconds. Add ziti, 2 1/2 cups milk, and the broth. Bring to a boil over high heat and cook, stirring frequently, until a thick sauce forms, about 12 minutes.
3. Stir in broccoli, sun dried tomatoes, and remaining 1 cup of milk. Cover, reduce heat to medium, and cook until broccoli turns bright green and is almost tender, 3-5 minutes.
4. Uncover and add parmesan and chicken. Simmer, uncovered, until chicken is cooked through, 1-2 minutes. Season with pepper and salt. Serves 6.
*You could easily omit the chicken and add more veggies if you wanted- try carrots, zucchini, etc. or just use the Normandy mix from Costco's freezer section

That sounds really good. Do you cook the ziti in the milk and broth? (Sorry, I am a little slow today.) If so, that sounds like a good, one-pot dish! Nice....

This was the first time I made this recipe, and it was fantastic!! I could not stop eating it. It tasted just like something from Macaroni Grill and it was so easy. I love using ONE pan! And yes, Jamie, the noodles cook in the milk/broth. This is definitely a keeper.
Normandy mix from Costco, huh? I usually avoid frozen veggies (except for peas), but I might have to check that out.
