
So tonight we went to dinner at our friends' house, Andrew and Mala. I was talking with Mala about recipes and cooking, since I am always interested, and she shared a new one with me. It's called "White Christmas". She found it in a Donna Hay magazine this past December as something to give to neighbors, friends, etc. It's the most delicious treat! Just after we were talking about it, Andrew's brother called from the store where he was buying the ingredients. He came over and we made it. We all just sat there oohing and aahing and enjoying the white goodness. You should try it!
800g (32 oz) white chocolate
2 c. dessicated coconut
1 c. pistachios (shelled)
1 c. craisins
Melt the chocolate in the microwave or double boiler. Remove from heat and add the rest of the ingredients. Stir well. Press into a small bar pan (20 x 30 cm)* which has been lined with baking paper. Smooth the top with a spatula. Set for one hour in the fridge then slice into bars or shapes, as desired. Hint- do not chill any longer if you want to cut it into nice pieces b/c it will get too hard to cut. Return to fridge once cut until it's completely set.
*the recipe only gives the pan size in cm but I think a 9 x 9 inch pan would be a comparable size
