
I have been very pleased with my Thai cooking class and have learned some great recipes. It's about half over.. still undecided if I will do the advanced course. It's pretty expensive. Will have to think on that. Anyway...
One of my favorites has been Chicken Satay. It's so easy to make. Here is the recipe:
1 cup unsalted peanuts
2 cups water
2 t. curry paste
little oil for frying paste
1 t. salt
1 T. vinegar
2 T. sugar
4-5 T. peanut butter
Put peanuts in saucepan and roast until quite dark (no oil or non-stick spray needed). Remove and use food processor or mortar/pestle to grind peanuts until small chunky pieces. In a saucepan fry curry paste in oil. Add water, salt, vinegar and sugar and stir, bringing to a boil. Reduce heat. Add ground peanuts and peanut butter and stir. Add more peanut butter if you need to thicken it or water to thin. Cool sauce.
Dip chicken strips in sauce until well coated. Thread onto skewer stick and grill.

I am glad you enjoyed your class and that you actually made what was taught. Perhaps I will give it give it a try sometime.
I think you should do the Advanced Cooking Class, even though it's expensive. It's a great skill to have, and you guys love Thai food so how can you go wrong with it?
