Dinner in a Pumpkin

I am sharing today's recipe using Wildtree ingredients to give you a little taste of what is to come at my Wildtree party. It's on November 11th at 7pm and anyone who is reading this is invited. The thing that is great about having a Wildtree party is that not only will there be great food- it's ALL about food. That's the point. You come and taste the products. Wildtree has delicious oils, mixes, dressings, etc. that are all free from dyes, artificial colors and flavors, preservatives, hydrogenated oils, etc. About 12 years ago, the founder, Leslie Montie, discovered that her two young children had issues with foods and other medical conditions that required them to eat a very pure, natural diet. So she developed the foods that are now sold through Wildtree. As a mother she also made sure to develop things that are going to make it easier to feed your kids in a healthy, nutritious way. Some of the most popular products are the soup and bread mixes, salsas, flavored oils, (I love the European Dipping Oil) and the herbs and spices which you can add to soups, use to marinate meats, and for other recipes. Another one of my favorites is the Asian Plum dressing. So tasty. Anyway, this lets you know about Wildtree, so if you're interested in the products or just getting out for the evening to come, chat, and eat (who doesn't enjoy that?!) then put it on your calendar.

DINNER-IN-A PUMPKIN STEW



2 ½ lbs Stew meat, cut into one inch pieces
1 tablespoon Wildtree Rancher Steak Rub
½ teaspoon freshly ground black pepper
3 tablespoons Wildtree Garlic Grapeseed Oil
1 14oz can of Beef Broth
4 cups Yukon Gold Potatoes, peeled and cut into 1 inch pieces
1 ½ cups baby carrots
1 medium onion, chopped
1 tablespoon Wildtree Red Bell Pepper & Garlic Blend
1 teaspoon Wildtree Garlic & Herb Blend
14.5 oz can diced tomatoes
½ cup water
8 oz sliced mushrooms
1 pumpkin (10 to 12 pounds)

PREPARATION:
Combine stew meat, Rancher Steak Rub & black pepper in a sealed plastic bag, and shake to coat. Heat 2 tablespoons Wildtree Garlic Grapeseed oil in a Dutch oven, add seasoned meat and brown. Add beef broth and bring to a boil. Cover and simmer 1 hour. Add the next eight ingredients and bring to a boil; then simmer for 20 minutes. Wash pumpkin; cut a 6- 8-in. circle around top stem. Use a sharp knife with a long study blade. Cut at an angle - it keeps the “lid” from falling into the pumpkin. Clean out the inside of the pumpkin and brush with the remaining 1 T Wildtree Herb Roasted Garlic Grapeseed Oil inside and outside of the pumpkin. Place pumpkin in a shallow sturdy baking pan. Pour the stew into the pumpkin and replace lid. Bake in a 325 oven for 2 hours until the pumpkin is tender (do not over bake). Serve stew from pumpkin, scooping out a little pumpkin with each serving.

Great philosophy. I think we can polute ourselves with all the "junk" we eat. I try to stick with wholesome ingredients but it's hard to do all the time. Sometimes fast food is my best friend along with the T.V.
