Homemade Pizza- there really isn't a recipe. This is one of those fast and easy dinners you do on nights that you don't have time or just can't be bothered cooking. My kids have piano at 6 pm on Wednesdays, so I just wanted something that they could eat quickly before she got here.
Tonight we used a pre-baked crust (like Boboli) with tomato sauce, turkey pepperoni, and cheese. They also had salad and baby carrots.
My pizza was made with a pita for the crust (perfect for personal pizzas). I mixed 1 Tbsp of tomato sauce with 1 Tbsp of pesto and spread it on the pita. Then topped it with spinach, sun-dried tomatoes (rinse in hot water and pat with paper towels), and chunks of sweet potato (yes, it's like pumpkin. I love it). I sprinkled a very light layer of finely grated cheese over top. Bake in 350 oven- right on the rack- for about 4 minutes. Just until cheese is melted and it's warm.
I had to add this fast and easy crust recipe, because this is what I normally use. Throw the following in your mixer:
2 1/2 c. flour
1 c. water
1 tsp. salt
1/2 pkt yeast
Let rise for about 45 minutes. Roll out and make your pizza. (this makes about 1 large, I double it if we want 2 pizzas or lots of calzones)

yum! Your pizza sounds wonderful! I used to eat pizza on pita bread when I was in college but mine weren't half as gourmet as yours!
I am going to take your advice and get me some pita bread!
