
I'm starting to forget which recipes I have posted already... I should make a master list. Here's a good cookie one that we discovered a while back. Can't remember the source. I have made them with or without the chocolate chips and enjoy them both ways. I think I like them better than plain pumpkin cookies. Give them a try!

PUMPKIN OATMEAL COOKIES
2 c. flour
1 c. quick oats
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 c. butter/margarine
1 c. brown sugar
1 c. sugar
1 egg
1 tsp. vanilla
1 c. pumpkin
1 c. chocolate chips
1. Combine flour, oats, soda, cinnamon, and salt
2. Mix butter, sugars and beat until light and fluffy
3. Add egg and vanilla, mix
4. Alternate additions of the flour mix and pumpkin
5. Stir in chocolate chips
6. Drop onto baking tray (I spray it with Pam)
7. Bake at 350 degrees about 12 min (but watch them in your oven and remove before they brown on edges)

Personally I think oatmeal improves just about any cookie.
Your kids have been having so much good cousin time during the break!
